Abstract Fruits and vegetables are the most popular raw ingredients that act as a source of dietary fiber other biologically active substances benefit human body. The vast majority nutrients enter body with food, so daily ration an average person should include those useful products can provide necessary amount substances. Vegetable-based materials containing vitamins, minerals, antioxidants, fibers used in production food considered functional properties. A priority area product technologies is search for technological methods given biological value (high BAS antioxidant content). paper presents recipes innovative technology syrups based on Viburnum fruits, well evaluation consumer characteristics, nutritional orientation corresponding products.
